We have adopted this policy which will play a major role in all our management and operational decisions. As David Attenborough has often pointed out food waste contributes as much as 6 % to global GHG (greenhouse gas) emissions.
This is made up of mainly food waste sent directly to landfill (CO2 and methane), food transport (van, boat, plane etc.).As a hospitality business we can do our bit to reduce this detrimental impact on our environment by changing the way we operate. Reduce Food Waste.
During the lockdown period we developed our own software (which we have called ZWM - zero waste management) to enable our guests to pre-order as easily as possible, their breakfast, lunch, dinner and take-away meals.

To achieve our goals we do need to work closely with our guests and this does involve a bit of forethought and in some respect inconvenience.
But together we can make a positive step towards reducing our carbon emissions.

A major element in the process is pre-ordering of food choices which enables the kitchen to only prepare the quantities of food necessary for each service. This minimises the actual food waste contributing greatly to LESS CO2.TOGETHER WE CAN DO THIS.

BUY LOCALLY AND PRODUCE FRESH IN-HOUSE DISHES. As part of this policy we have created our own bakery using as much Scottish flour (no additives) & ingredients as possible.

OUR BEER Our micro-brewery produces real ale on the premises.
OUR HARBOUR We operate our own fish ponds keeping local seafood alive & fresh ready for our guest’s orders.
OUR GARDEN We have joined forces with a local crofter who is producing a range of fresh salads, herbs, fruits and vegetables. Our own garden also produces a fine selection of herbs and aromatics.
SCOTTISH CIDER – LOST ORCHARD- We are proud to stock this fantastic cider which is made from 100% Scottish apples. They are working to bring back the Scottish orchards from yesteryears creating a fantastic refreshing cider. Sourcing Scottish apples also reduces the carbon footprint thus supporting a healthier and more sustainable planet.
